Ginger Spiced Pork

Ingredients

  • salt freshly ground black pepper
  • 14oz can chopped tomatoes
  • 4oz mushrooms, sliced
  • 1 tbsp Worcestershire sauce
  • Dash of tobasco sauce
  • 2 cloves garlic, crushed
  • 2 tsps ground ginger
  • 2 tbsps brwon sugar
  • 2 tbsps vinegar
  • 1oz flour
  • Knob of butter
  • 2 tbsps oil
  • 2lb Redhill Farm Lean Cubed Pork

Recipe

Heat oil and butter in a large frying pan, and fry the meat until beginning to brown. Add the sugar and toss over a high heat until brown. Add the flour and ginger and blend well, then add the remaining ingredients. Stir until the sauce thickens.

Transfer to a casserole, cover and cook in the oven at 325F, 170C, Gas Mark 3 for about 2 hours, or until the meat is tender.
